Resumen
Ice slurry is a modern and versatile technology for the conservation of marine products that guarantees the effective preservation and condition of the product, making it suitable for the commercial market. Currently, this technology is not widely employed in Peru. The main objective of this study, therefore, is to compare the use of ice slurry with the traditional flake ice method in order to suggest the former as a potential alternative in the conservation and transport of perico (Coryphaena hippurus). Organoleptic and microbiological quality parameters, described by SANIPES, were evaluated. The results of the organoleptic analysis showed that preservation using ice slurry was more effective (Category A) than when using flake ice (Category B). Regarding the count of mesophilic aerobes and E. coli, no significant differences were found in both analyses. It was concluded that the ice slurry conservation method could be used in artisanal vessels as well as during the transport of this product from the port of Matarani to the inland city of Arequipa, Peru.
