Resumen

This paper examines the history of Arequipa's picanterías, focusing on those that date back to the chicherías, tambos, and rancherías in Arequipa's colonial and republican context. It discusses the dynamics of Indigenous subordination and colonial control embedded in the production and marketing of food and beverages; it also addresses the social hierarchies related to food and the socioeconomic spaces linked to consumption, highlighting the emergence of picanterías as symbolic spaces of cultural interconnection. It then addresses the methodological challenges of studying this historical phenomenon and its effects on the social and gastronomic configuration of Arequipa. © (2025), (Universidade Estadual de Maringa).
