Sustainable Value Proposition Model Canva: Methodology for the Design of a Sustainable Food Business Project aimed at reducing the consumption of trans-fat products in preschool children in Metropolitan Lima using the DT Method and Sustainable Business Model Canva tools

Resumen

Since the onset of the COVID-19 pandemic, there has been an 80% increase in the excessive consumption of trans-fat products, negatively impacting the diet of preschool children; understood as infants aged between 3 and 5 years old. Packaged processed snacks with warning labels have become an ally for parents responsible for planning their children's meals, as they simplify the process of packing lunches or providing snacks in their daily routine. This has resulted in the development of cardiovascular, neurological, endocrine, and other pathologies that affect their quality of life, indicating a cause-and-effect relationship. At the end of 2021, Consumer Protection Commission No. 3 conducted a study in which 45 snacks were selected to assess whether they complied with established fat limits. Of these, only 5 passed the test, which is not only concerning but also infuriating. Hence, a quantitative study is proposed to contribute to a solution to the identified need in the food sector, ensuring it is sustainable, nutritious, and healthy for the target audience. This study employs a combination of the Sustainable Business Model Canva and the fourth phase of the DT Method (Value Proposition Canva) to design a value proposition with the characteristics mentioned before. Finally, validation is carried out through Hedonic Testing (facial and acceptance).
