Resumen

The aim of this study was to determine the association between the frequency of Salmonella sp. in fresh chicken carcasses and Safe Food Handling (SFH), Good Hygiene Practices (GHP) and knowledge of market vendors in the city of Abancay, Peru. Sixty samples of fresh chicken carcasses were taken from local markets, and a survey was conducted to identify SFH, GHP and knowledge of the vendors. The frequency of Salmonella sp. was 5% (95%CI=1.0-13.9). Two of the six markets (La Victoria and Progreso) tested positive (50.0 and 16.7%, respectively). The frequency of contamination in the sales stands located outside the markets was 16.7% (1/6; 95%CI=0.4-64.1) and among those located inside was 3.7% (2/54; 95%CI=0.5-12.8). The only serological type isolated was Salmonella Enteritidis. Moreover, 64% (95%CI=61-67) of the vendors performed SFH, 48.7% (95%CI=45.6-51.8) performed GHP and 9.3% (95%CI=6.6-12) stated to have knowledge about Salmonella. No significant association was found between the frequency of Salmonella sp. in fresh chicken carcasses and the SFH, GHP and the vendors’ knowledge (p>0.05). © Los autores.
