Resumen

Introduction: Salmonellosis is an infection of importance in public health, representing an intoxication within the most prevalent zoonosis in Latin America. Objective: to determine the variations of serogroups of Salmonella enterica in eggs of commercial use. Materials and methods: the microbiological analysis was performed by means of in vitro cultures and biochemical confirmation according to the method proposed by Baker and Goff, serological tests by means of antisera polyvalent and monovalent and statistical tests were performed by means of Chi-square. Results: presence of Salmonella enterica in different egg layers, cuticle is 8.64 %, shell 5.41 %, outer membrane 3.24 % and for the yolk 4.32 % was obtained, the statistical test reports that there are no significant differences for the four cases, the serogroups identified were C1 for cuticle and shell C1 and B, in outer membrane C1 and yolk C1. Conclusions: this research allowed us to understand the dispersion of Salmonella enterica in the different areas of the egg (shell, outer membrane, cuticle and yolk) and its success as a pathogen of a wide range of serogroup hosts. In the future, greater knowledge of these serogroups and their behaviors will facilitate the implementation of strategies of biosecurity, sanitation and food handling source not only of laying hens, but of all the variety of animals that are load-bearing or likely to carry this pathogen severe for the prevention of the disease and decrease the vulnerability in people and other animals.
