Resumen
Sustaining the supply of products rich in these compounds and aligning the production with emerging sustainable actions have become a challenge for professionals and researchers in this field. Green extraction technology can be considered as a key strategy to overcome this specific challenge. Among the many extraction technologies, pressurized liquid extraction (PLE) has received attention and has become a relevant solution to extract bioactive compounds with different properties from diverse natural sources. This chapter aims to explore the use and optimization of PLE to obtain bioactive compounds (polyphenols, fatty acids, essential oils, and related compounds and carotenoids) from natural sources. Scientific evidence from several studies indicates that controlling extraction conditions can effectively improve the extraction process, especially for temperature, time, and solvent composition. However, current challenges involving the scale of extraction, coextraction of unwanted compounds, and exploring the intricate relations during extraction still need more attention. Finally, PLE can be seen as a promising technology capable of producing extracts rich in bioactive compounds from different categories and has potential applications in downstream produces and processes.
