Resumen
Peru has developed a tourist offer based on its cultural heritage, focusing in a first stage on cultural heritage, monumental material, such as the renowned archaeological site of Machu Picchu, but this reality was changing when Peruvian gastronomy, an immaterial expression of culture, was incorporated into the national tourist offer as part of the tourist attractions that complement the classic offer. The objective of this study is to analyze Peruvian gastronomy as a cultural heritage of the country, as well as to describe its capacity to motivate tourist trips to Peru as a tourist attraction. The approach of this research is mixed and the techniques of documentary review and the registration technique were used for the identification and systematization of both quantitative and qualitative data, as well as indirect observation. The results have been organized in three aspects: the first one deals with the evolution of Peruvian gastronomy as a familiar cultural fact, up to the level of world recognition; second, Peruvian gastronomy is described as a cultural heritage of the nation and the world; and in the third aspect it is analyzed as a tourist attraction;concluding that the food culture of Peru is a cultural heritage and tourist attraction, which permits its use as an element of social change.
