Resumen
Pectin, a polysaccharide naturally present in the cell walls of fruits and vegetables, plays a fundamental role in various applications due to its gelling, thickening, emulsifying, and stabilizing properties. The extraction process involves breaking down the plant cell wall to release the pectin. Conventional acid extraction has been widely used, but technological advances have driven the development of eco-friendly and emerging methods, such as extraction assisted by enzymes, microwaves, ultrasound, ohmic heating, high pressure, and subcritical water.
