Resumen
This study focuses on enhancing the production process of a Peruvian craft beer company using Lean Manufacturing tools. Through tools such as Value Stream Mapping (VSM), 5S, Total Productive Maintenance (TPM), Kanban, and Standardized Work, key inefficiencies were identified and addressed, particularly in post-fermentation stages. The implemented improvements yielded significant results: a 3.7% reduction in the production cycle time, a 16.4% decrease in waste, and an 8.12% increase in daily production capacity. Additionally, transport and cooling times improved by 51.7% and 13.8%, respectively, while fermentation time decreased by 11.9%. These advancements highlight the economic and operational benefits of Lean tools, including lower costs, increased efficiency, and enhanced market responsiveness, contributing to a more sustainable and competitive production process.
