Resumen

The objective of this research was to establish technological parameters that maximize the nutritional contribution and good acceptability in the process of elaboration of a nutraceutical drink based on tumbo and arracacha, the selection, classification, washing, blanching (65 ° Cx5min), extraction from the yellow arracacha juice, extraction of the Tumbo Serrano juice without seeds and impurities, and filtering; For the formulation of the nutraceutical drink, the proportions 25:45, 20:48 and 15:50 (Tumbo: Arracacha) were considered. The processing parameters were pasteurization at 85°C. for 15 minutes, soluble solids: 13±0.06°Brix, pH:3.9 ±0.01. To assess the physicochemical quality, tests for vitamin C, calcium, protein, and iron were performed. The results of these evaluations were processed using the Minitab 18.0 and Excel software, through the analysis of variance and, when there was a significant difference, the Tuckey test was used. The results reported that the drink that presented greater sensory acceptability was the formulation 15:50, the same one that presented a vitamin c content of 69.9mg of ascorbic acid/100 ml., 32.9mg/100ml. Calcium, 2.03 g/100 ml. protein; 1.41mg/100ml. iron and energy 95.8 Kcal/100 ml.; Finally, the microbiological analyzes carried out on the drink indicated that it was innocuous. By way of conclusion, it can be indicated that with a formulation of 15:50 of (tumbo: arracacha) it is possible to elaborate a nutraceutical drink with high sensory acceptability and that meets the microbiological criteria of sanitary quality required in RM-591-2008.-MINSA/DIGESA.
