Resumen
The paper focuses on the review of methodologies to take advantage of fish waste. Fishing generates a large amount of waste that is dumped into marine ecosystems, causing environmental problems. The objective of the paper is to identify methods that improve the utilization of these wastes, conserving their valuable compounds such as proteins, essential fatty acids, and other bioactives. For the review, the PICO and PRISMA methodologies were used, and various sources of academic information were analyzed, selecting 42 relevant articles. The results highlight that conventional fish waste processing methods are less efficient, causing the degradation of valuable compounds. In contrast, more efficient and environmentally friendly emerging methods are identified, such as ultrasound extraction, supercritical fluids, microwaves, electric pulse field, deep eutectic solvents and green solvents. Finally, it is concluded that the use of these green technologies not only preserves the quality of fish waste, but also reduces the environmental impact and offers additional economic opportunities for the fishing industry.
