Resumen
Quinoa production in Peru has intensified because it is the largest producer of quinoa worldwide and because of its high nutritional content, causing farmers to change their traditional type of cultivation to a more industrialized one, for which it is necessary to identify the impact environment generated by the production of quinoa. For which in the present research work, through the use of the life cycle analysis methodology, the main categories of damages that occur during agricultural production were identified and characterized, obtaining as a result that the agricultural phase produces environmental impacts in human health, resources and the quality of ecosystems, prioritizing the highest percentage of negative environmental impacts in the categories of climate change, acidification and eutrophication, however, there are also positive environmental impacts. By the use of compost that minimizes the environmental impact produced by the life cycle of Quinoa.
