Sebastian C.C.M.; Enrique J.H.C.; Segundo M.O.G. · RISTI - Revista Iberica de Sistemas e Tecnologias de Informacao (2024)

Resumen

The research highlights the significant growth of the catering sector due to the growing demand in the business and social spheres. Despite quality and adaptability, the sector faces challenges such as competition and cost management, highlighting the importance of timely delivery of orders. Lean Manufacturing is proposed as an effective philosophy to reduce delivery times. It is highlighted that micro and small catering companies in Peru face obstacles such as lack of planning, which results in economic losses. Reducing delivery times is positioned as crucial for customer satisfaction and the competitiveness of these companies. A proposal was designed based on lean tools such as 5S, Kanban, JIT and VSM to solve the problems, reducing the initial status of order delivery by 15%.
