Resumen
Industrial-scale production of Agaricus bisporus demands continuous environmental control throughout cultivation. Conventional manual management practices often struggle to maintain the narrow setpoints required, leading to process variability and suboptimal outcomes. This study presents an Internet of Things (IoT)-based automated environmental control system designed for industrial mushroom grow rooms. The solution integrates a network of ESP32 microcontrollers equipped with sensors to monitor ambient temperature, relative humidity, soil moisture and temperature, and carbon dioxide concentration. A fuzzy-logic controller with trapezoidal memberships enforces phase-specific, user-defined thresholds to make real-time decisions for driving two actuators: a motorized damper that modulates air recirculation and a motorized gate that controls an exhaust fan. A mobile application provides users with live telemetry, threshold configuration, and a log of actuator activity. A comparative experiment was conducted in an industrial facility using two 187.2 m grow rooms over a 54-day cultivation cycle: one grow room operated under the proposed IoT system and the other under standard manual control. Productivity was evaluated as yield (kg/m) and percentage increase in production, and quality was assessed through a 9-item expert panel and a Mann Whitney U test. Experimental validation demonstrated an increased average yield from 8.73 kg/m to 11.12 kg/m (27.37% gain), and achieved a statistically significant difference in the Total Quality Index (p = 0.001878).
