Investigating lean green food manufacturing practices and performance: Inside a peruvian food company

Lovera J.; Santos K.; Ramos E. · AIP Conference Proceedings (2026) · DOI: 10.1063/5.0309325

Resumen

Over the years, industries have been striving to optimize operations and environmental impact. This article presents a study of Lean Green integration focused on tools for waste reduction. Consequently, an integrated, efficient, and eco-friendly model will be introduced, resulting in waste reduction, and increased environmental impact within a food company, and for critical processes we applied 8D methodology. This model incorporates lean green tools such as Value Stream Mapping (VSM), standardization, Kaizen, A3 Methodology, and 5S, with the aim of reducing waste by 20%. This integrated model enables the current supply chain to move towards a lean and ecological manufacturing system.
