Impact of Implementing Food Safety and Quality Management Systems 2018-2023. A systematic literature review

Antonio Javier Mendoza Gutierrez J.; Dorelli Altamirano Olivera A.; Ruben Bustamante Nuñez Y.; del Socorro Sotomayor Nunura G. · Proceedings of the LACCEI international Multi-conference for Engineering, Education and Technology (2024) · DOI: 10.18687/laccei2024.1.1.982

Resumen

This article is a research effort focused on the impact of implementing food safety and quality management systems between the years 2018 and 2023. It aims to conduct a systematic review of the literature. The study includes introduction, methods, results, discussion, and conclusion sections. The introduction highlights the importance of organizations demonstrating their ability to produce, process, package, and market safe and quality food. The implementation of FSMSs is critical to achieving certification and ensuring customer safety. However, implementing these systems can be challenging, especially in developing countries, due to limitations such as budget constraints, lack of training and resistance to change. Different FSMSs are compared, focusing on ISO 22000, Hazard Analysis and Critical Control Point (HACCP), International Featured Standards (IFS) and the British Retail Consortium (BRC). These systems have objectives, technical requirements, specific functions, as well as other aspects that help improve the characteristics of the food produced and offered. Several advantages and benefits were identified for implementing QMSAS in organizations. These include improved quality management, improved production processes, supply line collaboration, efficient logistics and distribution processes, increased confidence and organizational compliance. Overall, valuable information is provided on the impact, benefits and challenges of implementing a FSMS in the food industry, helping researchers, academics and practitioners understand how these systems ensure food safety and protect the health of the population.
