Resumen
This chapter provides a scenario from the past 3years on the extraction of polyphenols using sub- and supercritical fluid-based technologies, including supercritical fluid extraction (SFE) and pressurized liquid extraction (PLE). The nonpolar behavior of CO2 does not allow the extraction of most polyphenols. Therefore using cosolvents is necessary to modify the polarity of CO2 to extract nonvolatile polyphenols; safety issues related to the selection of cosolvents or solvents are addressed. PLE intensifies the recovery of phenolics and reduces processing time and solvent consumption, leading to reduced processing costs. Therefore process optimization can be performed by evaluating the kinetic behavior of extraction using, for instance, a simple linear spline model. The step-by-step deduction of the model and its application to selected raw materials are described. Additionally, the life-cycle assessment for the processes is discussed.
