Resumen

Campylobacter coli is a microorganism that colonizes the intestine of birds and can therefore contaminate products derived from these such as meat and eggs. The present study aimed to evaluate the capacity of C. coli to remain viable on the eggshell under two temperature conditions and to determine its presence in eggs marketed in Lima, Peru. Eggs experimentally contaminated with C. coli were kept for 4 days at temperatures of 4 and 30 °C to evaluate the daily C. coli load on the eggshell. Sixty eggs were purchased from supermarkets, traditional markets and retail stores (n=20 per place of sale) to determine the presence of C. coli. The results showed that C. coli can remain viable on the eggshell with a tendency to reduce the initial load >6 log10 CFU/mL to ranges of 2.19-2.77 log10 CFU/mL for eggs kept at both temperatures 4 days after contamination, and with no significant differences between temperatures (p>0.05). On the other hand, it was not possible to isolate strains of C. coli from the shell of eggs purchased in the three types of stores evaluated. © Los autores.
