Resumen
The consumption of broiler chicken liver is popular due to its price for being economical and high iron content; however, it may contain ecotoxic ions that exceed the Maximum Permissible Limits (MPL), as well as antibiotic residues. Fifty livers were randomly collected from the main supply centres of the eight provinces of Arequipa and the concentrations of Fe, Se, As, Cd and Hg (mean ± standard error, range, CV) were determined by inductively coupled plasma mass spectrometry (ICP-MS) and the presence of antibiotic residues by the ELISA test. The values obtained for iron were 103.8374 ± 33.5103 mg/kg, selenium 0.6587 ± 0.1065 mg/kg. The range for arsenic was from bLD (below the Limit of Detection) up to 0.4800 mg/kg, for cadmium from bLD up to 0.0134 mg/kg and for mercury from bLD up to 0.02 mg/kg. All samples showed readings of Fe and Se, while there were bLD samples for the ecotoxics As, Cd and Hg without exceeding the LMP and therefore, without risk to the consumer. No antibiotic residues (µg/kg) were detected by ELISA. © Los autores.
