Resumen
Constipation is a health issue that affects 20% of the population in Peru, impacting their quality of life. This project proposes a natural alternative to this problem through the creation of functional cookies made with oats and pitahaya, using the Design Thinking methodology for their development. To date, there are few local products aimed at addressing this specific health issue. The main contribution of this study is the formulation of healthy, fiber-rich food designed to promote proper intestinal transit. Product validation was carried out through sensory acceptance tests, analyzing taste, texture, and perceived effectiveness among consumers. The results show that the cookies not only helped improve digestion but also received good evaluations in terms of general acceptability. In conclusion, the combination of nutritious ingredients and marketing strategies focused on consumer education offers significant potential to position this product within the growing healthy food market in Lima.
