Resumen
Yeasts are one of the most important microorganisms not only as eukaryotic cell models but also because of their metabolic capabilities and robustness, with several applications since ancient times. Biotechnological potential of yeasts has been quickly recognized and exploited for food, agriculture, industry, pharmaceutics, and environmental applications. Molecular and genomic-based approaches have intensified their uses and expanded toward new applications and sustainable technologies. Nowadays, yeasts have a pivotal role to produce conventional and new biocatalysts, proteins, fine chemicals, drugs, biofuels, polymers, biomaterials, etc. Indeed, nanobiotechnology has expanded its applications for a sustainable agriculture and environment clean-up. Finally, sustainable biorefineries for biomass conversion into value-added products are increasing the requirement for yeast cell factories. This chapter summarizes different bioprospecting and metagenomic strategies for the search for new strains, the molecular tools for their improvement, and expansion of biotechnological and nanotechnology applications for agriculture and the environment clean-up.
