Samuel S.-A.R.; Karla A.-F.; Violeta G.-A.; Jean P.-L.; Lucy S.-B.; Sharom V.-V.; Mirian Y.-L. · Proceedings of the LACCEI international Multi-conference for Engineering, Education and Technology (2025) · DOI: 10.18687/laccei2025.1.1.1475

Resumen

The food industry holds a strategic position within the national economy, not only because of its economic impact across different countries but also due to its influence on people's well-being, driven by innovation and the development of new, healthy products aligned with market needs. In this context, FITELLA emerges as a nutritious food made from chickpeas and walnuts, distinguished by its high nutritional value and its commitment to consumer health and the promotion of organic farming. This study focuses on applying advanced methods, such as linear regression, to project FITELLA’s sales in 2024. Additionally, production engineering tools, such as the Aggregate Production Plan (APP) and the Master Production Schedule (MPS), have been incorporated to optimize resource use, reduce production costs, and ensure the product’s long-term sustainability in a competitive market. The results highlight the effectiveness of linear regression in forecasting demand and demonstrate that both the APP and MPS are essential tools for improving operational efficiency, adapting to environmental changes, and increasing FITELLA’s competitiveness in the food and beverage sector.
